Shrimp Ceviche 101



Shrimp Ceviche 101

Simple, refreshing, and light!

Ingredients

¼ lb shrimp peeled and deveined (cooked shrimp would be best)
2 cups water
1/8 tsp salt
2 tomatoes diced
½ cup onion diced
½ cup cucumber peeled and diced (or bell pepper)
1 tbs lemon juice
Chopped cilantro
Lettuce leaves for garnish
Salt and pepper to taste

Mix water and 1/8 tsp salt in a small sauce pan and bring to simmer. Add shrimp and cook for about 2 minutes. Shrimp should be pink in both sides but not overcooked. Remove from heat and dice it.

In a small bowl, mix the rest of the ingredients with the shrimp and season to taste. Serve chilled.
