Yes, I've been craving raspberries! The trick to having dessert is not to give up flavor but downsize portions.
Don’t give up flavor, just downsize the portions and enjoy this delicious dessert!
1 pineapple cake mix
Substitute coconut milk for water
¼ tsp coconut extract
Use butter instead of oil
Fat free whipped cream
¼ tsp Madagascar vanilla extract
2 cases raspberries
Mix the ingredients according to the directions in the cake mix and bake in a large sheet pan so the layer will be thinner.
Let the cake cool and cut it in 1” pieces.
Mix whipped cream and vanilla extract.
In a small cup, arrange one or two pieces of cake. Add a tablespoon of cream, and a layer of raspberries. Repeat once and it is ready to serve. You’ll have so many portions that you can make a lot of neighbors happy!
